In Adana, breakfast is unthinkable without liver, a tradition that has become a hallmark of the city. Every Sunday, kebab vendors set up grills in the side streets around the historic Büyük Saat (Great Clock) have been serving hundreds of kilos of freshly cut liver to their customers for over a century.
